Whipped Sweet Potatoes with Cardamon Servings : 12 Ingredients: 4 3/4 LBS Sweet Potatoes 1 Cup (2 Sticks) Butter, Room Temperature 3/4 Cup Whipping Cream, Heated 1 tsp Ground Cardamon 1/4 tsp Ground Nutmeg Preheat oven to 325°F. Line 2 large baking sheets with heavy-duty foil. Place potatoes on baking sheets. Pierce potatoes with fork. Bake until very tender, about 1 1/2 hours. Let cool slightly. Increase temperature to 350°F. Peel warm potatoes and place in bowl of heavy-duty electric mixer. Beat potatoes until mashed. Add butter, cream, cardamom and nutmeg. Whip until smooth and creamy. Season with salt. Transfer potatoes to 13x9-inch oval baking dish. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.) Bake potatoes until heated through and beginning to brown on top, about 45 minutes.

Lebkuchen (Spice German Cookie) Yield : 2 Dozen Ingredients: 1 1/3 Cups Honey 1/3 Cup Sugar 2 Cups All-Purpose Flour 1 tsp Double-Acting Baking Powder 1/2 tsp Baking Soda 1 Cup Mixed Candied Fruit 1 TBS Peanut Oil 1/4 tsp Ground Ginger 1/2 tsp Ground Cardamon 2 tsp Ground Cinnamon 1/4 tsp Ground Cloves 1/4 tsp Allspice (Optional) 1/4 tsp Fresh Nutmeg (Optional) 1 1/2 Cups All-Purpose Flour Spray bottom and sides of a 10 x15 inch glass pan with a non-stick spray. Preheat oven to 325 F. degrees. In a 2 cup glass measuring cup, heat the honey and 1/3 cup sugar in a microwave for 1 minute. Pour this mixture into a medium mixing bowl. Sift together the flour, baking powder, and baking soda. Add to the honey mixture. Stir well. Add and mix in by hand the candied fruit, oil, and spices. Add 1 1/2 to 2 cups more flour. Knead dough to mix (dough will be stiff). Spread into pan. Bake for 20 minutes until inserted toothpick comes out clean. Cut into squares. May be frosted with sugar glaze or eaten plain. Best if stored for 2 weeks.
